We had a mini adventure last weekend up north. I was amazed by all the lovely colors in 
Ohio and West Virginia.
There is just something magical about driving in the mountains on a foggy fall morning .

 It was a lot of fun to take the doggies, they enjoyed the long walk and the apple sniffing :) 

Sky Top was great and crazy busy. It was a fun experience but I think next time we would like to go somewhere not as popular.

* gf/vegan brownies *



























Good morning Everybody!

I finally made the black bean brownies, and they are WONDERFUL! 

I was pretty skeptical about using black beans instead of flour, but when I bit into 
the brownie while it was still hot..... Oh my goodness! 




























You have to try them! I promise you cannot taste the beans at all and they are 
just so fudgey, not dry at all.

If you still have a few left the next day, just heat them up and enjoy your 
awesome black bean brownies!

* breakfast doughnuts *


























Good morning Lovelies! 

I have an amazing breakfast recipe for you today! 

I have the Oh She Glows Cookbook by Angela Liddon, and I am loving it so much! 
She has amazing plant-based recipes for each meal( I've tried several) and the 
wonderful pictures will make
 you want to look through this cookbook every day! :) 

So this past weekend I tried the " out-the-door chia power doughnuts". 
Needless to say they are super delicious, packed with fiber, antioxidants, protein 
and omega-3 fatty acids. 

Let me tell you ..even my husband loved them !! :) 


























Oh She Glows "out-the-door chia power doughnuts 


3/4 cup gluten-free oat flour 

1/2 cup chia seeds

1 1/2 teaspoons baking powder

1/4 teaspoon sea salt

1/4 teaspoon ground cinnamon

1/3 cup pure maple syrup or other liquid sweetener

1/3 cup non-dairy milk ( I used coconut milk )

1 teaspoon vanilla extract 

coconut oil 


Don't worry if you don't have oat flour you can easily make your own! Just put 
your oats in a food processor and blend them until you get powder-like consistency. 
I cup rolled oats will make 
approximately 1 cup oat flour.

1. Preheat your oven to 300 degrees. Lightly grease your doughnut pan with coconut oil. 

2. Combine your dry ingredients in a large bowl. 

3. Add your liquids and stir until combined. The batter will be very runny!

4. Spoon the batter into the prepared doughnut pan, filling each cavity to the top. 

5. Bake the doughnuts for 22 to 26 minutes, until firm to the touch. Use your trusty 
toothpick to make sure they are ready.

6. Cool the doughnuts for 10 minutes, and then carefully invert the pan onto a cooling rack. 

You can serve it with some jam or nut butter, but they are just as delicious by their own.

Good morning Lovelies! 

Plastic bags, plastic bags everywhere.... When I moved to the United States 
I totally forgot that we don't really use plastic bags in Hungary. I mean we 
do have them in stores but you 
have to pay for them, so we usually carry our trusty tote bags when we do our grocery 
shopping. It was so 
convenient just putting everything in the "free" plastic bags so  I guess I forgot 
about those tote bags at home. 

And then I realized I am not using the plastic bags for anything...
you just put them in your little "plastic bag holders" and that's it. 

So I got a few tote bags and i ordered these reusable produce bags

I know it's so easy to get the free plastic bags however think about all the waste 
we are producing just with those bags. 

I try to do better to help our environment and I believe even the smallest contribute 
can make a big change. 





























Tips: 

* wash your bags 

* hang dry your bags 

* make sure you have your bags in the car so you won't forget to use them 



Now let's go to the farmer's market and be plastic bag free! :)

* fall recipes (pt. 6.) *

Chia pudding with pumpkin puree 



























Good morning Lovelies!

Well you guessed it!I have another recipe with some pumpkin puree for you. I am 
slightly obsessed with fall recipes. :) 

Chia pudding with pumpkin puree 

Ingredients: 

* 13.5 oz coconut milk 

* 1/4 cup chia seeds 

* 4 tbsp pumpkin puree ( I used the puree from the pumpkin that I roasted!:) You don't 
need the canned puree!)

* honey, cinnamon, vanilla extract ( optional ) 


Mix them all together, pour it into a mason jar. Let it sit in the fridge overnight and 
TA-DA you have your amazing, 3 ingredient, healthy chia pudding breakfast! Enjoy it 
with some fruit 
or nuts on top, you'll love it!I topped mine with some almonds and bee pollen, 
it's absolutely delicious.

Pumpkin pie oatmeal

Happy Monday Lovelies! 

I have an amazing breakfast recipe for you! I made it on Saturday and it was so 
delicious I had to share it with you. Not even mentioning I got to enjoy it on the porch 
looking at the lake :) 
Fall is beautiful, so let's enjoy all the fall fruit and veggies! 




























Pumpkin pie oatmeal 

Ingredients: 

* 2 cups milk ( i used coconut milk)

* 1 cup rolled oats 

* 1 cup pumpkin pure ( I roasted a pumpkin! )

* cinnamon, honey 

 Combine all ingredients in a medium size saucepan, bring it to a boil and immediately
 reduce it down to a simmer. When your oats are tender you're done! :) It 
usually takes me 10-15 minutes. 
I cut up a pear and washed some grapes for the full fall breakfast experience!:)

What's in my Library bag ?



























These books have been on my Amazon wish list for a while but I never got around 
to purchase them. 
So here is what I (freshly ) picked up from the library for October :



























No More Dirty Looks : As you probably noticed I am very passionate about all things 
"green", so I am super excited to read this lovely book telling the " truth 
about my beauty products". 

We Were Liars : Well the cover told me everything I needed to know about this book: 
Young Adult + a John Green quote = must read :) 

Yes Please  : I know I am super late.. but I am finally reading this book.
 Mindy Kaling, Aziz Ansari and Amy Poehler.. I cannot get enough!

I Am Malala : I needed something more serious. I've been eyeing this book forever and
 I just saw that the movie is coming out so I just have to read the book first. 
I always read the books first ! 

It's All Good My Father's Daughter : I am always in the look out for new cook books, 
I thought I would give these a go. 




























So that's what I have in my library bag.I feel very good about getting all these
 wonderful books this month, I am hoping they'll motivate me to read more. 
We are spending the weekend at the lake so I am looking forward to read and read 
on the deck with my cozy blanket and pumpkin spice chai tea.
