* wake up call #5 *



























Good morning Friends!

Another day, another breakfast recipe. 
I made my very first granola the other day, and I take it to work every morning, 
I love it so much!































* Homemade granola * 


* 2 cups nuts ( almonds, cashews, pumpkin seeds etc.) 
  roughly chopped 
* 2 cups unsweetened coconut flakes 
* 2 cups rolled oats 
* 2 tbsp chia seeds
* ground cinnamon 
* 5 tbsp melted coconut oil 

1. Preheat your oven to 250 degrees (120 Celsius).
2. Mix all your ingredients.
3. Line a baking sheet with baking paper. 
4. Spread your granola on the baking sheet.
5. Bake it for 20-25 minutes, until golden .


Allow it to cool and  definitely try some before you put it in a mason jar. 





 

I eat it with some fresh berries and plane greek yogurt, I hope you'll enjoy it too!

* orange, carrot cakes *

 
























 Good morning! 

We are on our second snow day in South Carolina, and I finally had time to make some 
delicious snacks again. 

My mom made these in Hungary, sent me the recipe and the next day my sister and I 
both made it :) 
It has no flour, no refined sugar in it, but the carrots and the fresh orange juice 
make it perfectly sweet for a little afternoon snack. 



























* Orange, carrot cakes * 

* 10 dkg coconut oil 

* 2 eggs

* 2 yolks

* 20 dkg almond meal 

* the zest of one orange 

* the juice of half of an orange 

* 1 medium carrot ( grated ) 

* 5 tsp maple syrup 


1. Melt you coconut oil and mix it with the eggs and the yolk, 

preheat you oven to 350 degrees ( 180 Celsius ) 

2. Add the rest of the ingredients to the coconut oil mixture. 

3. Grease your baking sheet ( i used my smallest, square one ) with some coconut oil 
and pour your cake mixture in it. 

4. Bake it for 35 minutes.

* energy bites *




























Good morning Friends! 

I've been sick for over 4 days... Thank goodness we had a 4 day weekend  
(so I could relax all day ) and for my ginger+lemon+honey tea . 

I feel so much better now and I was so excited to hare this amazing recipe with you! 
Yaaaayyy for healthy snacks! 



























* energy bites *



* 2 cups almond meal

* 2 cups dried dates 

* 2 bananas 

* 1/2 cup ground flex seed

* 3 tbsp chia seeds 

Place your dates in your food processor for a few minutes( I had to do it twice :) )
then gradually add all the other ingredients.

After a few minutes the mixture will be smooth and sticky, so you can start 
rolling your balls. 

I used a tablespoon to scoop up a batch of dough, then roll them into little balls 
with your hands.

You can roll them in some chia seeds, coconut flakes or whatever you'd prefer :).

Place them in the freezer for 2 hours to set, then keep them in the fridge. 

This recipe makes about 30 balls.

* wake up call #4 *

Jamie Oliver's smoothie pancakes 








Ingredients: 

* 11oz berries ( I used: strawberries, blueberries, raspberries) 

* 1 banana 

* 1 cup coconut milk 

* ground cinnamon 

* 1 egg 

* 1 3/4 cup whole-grain flour 

* 2 teaspoon baking powder 



1. Blitz your ingredients in a blender to make the smoothie pancake batter. ( half of your berries ) 


2. Tip into a bowl and pour in the rest of your berries. 

3. Place a large pan on a medium high heat.  ( I used coconut oil) 

4. Put your batter in the pan and cook each side for a couple of minutes.

* roasted nuts *




























Good morning Friends! 
I've been trying out some healthy ( and super easy) snack recipes, and I had to 
share this one with you because it's absolutely delicious. 

Roasted nuts 

* 1/2 cup almonds
* 1/2 cup pumpkin seeds
* 1/2 cup cashews 
* Himalayan salt
* garlic powder 
* onion powder 
* olive oil 


1. Preheat your oven to 350 degrees. 

2. Coat the nuts with the olive oil and spices. 

3. Spread the nuts on a baking sheet ( in a single layer ) 

4. Bake for 15-20 minutes ( stirring after 10 minutes )

* kale and quinoa patties *


Good morning Friends!

I hope you all had a wonderful time with your family and friends! 
We had lots of delicious ( but not really healthy )food, so I thought I would share a great 
healthy recipe with you today :) 

kale and quinoa patties 

ingredients: 

* 2 1/2 cups quinoa ( cooked, cooled ) 

* 3 eggs ( beaten ) 

* 1 1/2 cups Parmesan (greated) 

* 1/2 cup chives

* 1/2 yellow onion ( diced ) 

* 4 cups kale ( chopped ) 

* salt, pepper

* coconut oil ( for frying ) 


1. Cook your quinoa, make sure you wait for it to cool off a little before 
mixing it with the eggs !

2. Saute your onions then add your kale, and cook until the kale is bright green. 

3. Whisk your eggs in a big bowl, then add all your ingredients to the egg mixture. 

4. Heat up your coconut oil ( enough to coat the bottom), form little patties. 
( if it's too sticky or they won't stay together I usually add a little more Parmesan )  

5. Fry until golden brown on each side for a few minutes.

6. Let them drain on a paper towel. 

I usually make little patties but you can try to make bigger ones, enjoy them 
however you like it! 

You can add lots of spices, green onions, jalapeño pepper, make them   to your taste. 
Enjoy your little patties with some sour cream on top, they are absolutely delicious.
