* breakfast doughnuts *
Good morning Lovelies!
I have an amazing breakfast recipe for you today!
I have the Oh She Glows Cookbook by Angela Liddon, and I am loving it so much!
She has amazing plant-based recipes for each meal( I've tried several) and the
wonderful pictures will make
you want to look through this cookbook every day! :)
So this past weekend I tried the " out-the-door chia power doughnuts".
Needless to say they are super delicious, packed with fiber, antioxidants, protein
and omega-3 fatty acids.
Let me tell you ..even my husband loved them !! :)
Oh She Glows "out-the-door chia power doughnuts
3/4 cup gluten-free oat flour
1/2 cup chia seeds
1 1/2 teaspoons baking powder
1/4 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/3 cup pure maple syrup or other liquid sweetener
1/3 cup non-dairy milk ( I used coconut milk )
1 teaspoon vanilla extract
coconut oil
Don't worry if you don't have oat flour you can easily make your own! Just put
your oats in a food processor and blend them until you get powder-like consistency.
I cup rolled oats will make
approximately 1 cup oat flour.
1. Preheat your oven to 300 degrees. Lightly grease your doughnut pan with coconut oil.
2. Combine your dry ingredients in a large bowl.
3. Add your liquids and stir until combined. The batter will be very runny!
4. Spoon the batter into the prepared doughnut pan, filling each cavity to the top.
5. Bake the doughnuts for 22 to 26 minutes, until firm to the touch. Use your trusty
toothpick to make sure they are ready.
6. Cool the doughnuts for 10 minutes, and then carefully invert the pan onto a cooling rack.
You can serve it with some jam or nut butter, but they are just as delicious by their own.

* homemade popsicles *
Good morning, Friends!
Check out these beautiful popsicles! I cannot believe I made them.
I have been obsessed with other people's popsicle pictures on Pinterest, so I decided that i have to make them until we still have all these lovely fruit this summer.
You're not going to believe how easy is to make them and they are absolutely delicious.
I need to warn you, these popsicles are like the Justin's chocolate hazelnut butter compare to Nutella. They are not going to be as sweet as a regular popsicle, but they are healthy, packed with vitamins, so you can taste the fruit not the sugar. :)
I hope you'll try to make them!
You'll need:
- greek yogurt ( 1 cup )
- coconut milk ( 1/2 cup )
- shredded coconut
- chia seeds
- maple syrup
- fruit ( blackberries, raspberries )
Mix everything together, divide among the popsicle molds, and place it in the freezer.
Enjoy your yummy, delicious, healthy popsicles!
