* breakfast doughnuts *
Good morning Lovelies!
I have an amazing breakfast recipe for you today!
I have the Oh She Glows Cookbook by Angela Liddon, and I am loving it so much!
She has amazing plant-based recipes for each meal( I've tried several) and the
wonderful pictures will make
you want to look through this cookbook every day! :)
So this past weekend I tried the " out-the-door chia power doughnuts".
Needless to say they are super delicious, packed with fiber, antioxidants, protein
and omega-3 fatty acids.
Let me tell you ..even my husband loved them !! :)
Oh She Glows "out-the-door chia power doughnuts
3/4 cup gluten-free oat flour
1/2 cup chia seeds
1 1/2 teaspoons baking powder
1/4 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/3 cup pure maple syrup or other liquid sweetener
1/3 cup non-dairy milk ( I used coconut milk )
1 teaspoon vanilla extract
coconut oil
Don't worry if you don't have oat flour you can easily make your own! Just put
your oats in a food processor and blend them until you get powder-like consistency.
I cup rolled oats will make
approximately 1 cup oat flour.
1. Preheat your oven to 300 degrees. Lightly grease your doughnut pan with coconut oil.
2. Combine your dry ingredients in a large bowl.
3. Add your liquids and stir until combined. The batter will be very runny!
4. Spoon the batter into the prepared doughnut pan, filling each cavity to the top.
5. Bake the doughnuts for 22 to 26 minutes, until firm to the touch. Use your trusty
toothpick to make sure they are ready.
6. Cool the doughnuts for 10 minutes, and then carefully invert the pan onto a cooling rack.
You can serve it with some jam or nut butter, but they are just as delicious by their own.

Chia pudding with pumpkin puree
Good morning Lovelies!
Well you guessed it!I have another recipe with some pumpkin puree for you. I am
slightly obsessed with fall recipes. :)
Chia pudding with pumpkin puree
Ingredients:
* 13.5 oz coconut milk
* 1/4 cup chia seeds
* 4 tbsp pumpkin puree ( I used the puree from the pumpkin that I roasted!:) You don't
need the canned puree!)
* honey, cinnamon, vanilla extract ( optional )
Mix them all together, pour it into a mason jar. Let it sit in the fridge overnight and
TA-DA you have your amazing, 3 ingredient, healthy chia pudding breakfast! Enjoy it
with some fruit
or nuts on top, you'll love it!I topped mine with some almonds and bee pollen,
it's absolutely delicious.

Pumpkin pie oatmeal

Happy Monday Lovelies!
I have an amazing breakfast recipe for you! I made it on Saturday and it was so
delicious I had to share it with you. Not even mentioning I got to enjoy it on the porch
looking at the lake :)
Fall is beautiful, so let's enjoy all the fall fruit and veggies!
Pumpkin pie oatmeal
Ingredients:
* 2 cups milk ( i used coconut milk)
* 1 cup rolled oats
* 1 cup pumpkin pure ( I roasted a pumpkin! )
* cinnamon, honey
Combine all ingredients in a medium size saucepan, bring it to a boil and immediately
reduce it down to a simmer. When your oats are tender you're done! :) It
usually takes me 10-15 minutes.
I cut up a pear and washed some grapes for the full fall breakfast experience!:)

Pumpkin spice doughnuts
Good morning!
I 've been so excited about posting this recipe!!These little baked doughnuts are
wonderful! If you are a pumpkin spice lover you have to try them!
I found this recipe on Pinterest (of course), but i used whole wheat flour, and
coconut oil, just to make it a little bit healthier. This recipe uses a lot of
refined sugar...I know, I know, but sometimes it's ok to cheat a little. :)
Oh and don't forget to bake your own pumpkin so you can use that in your doughnuts!

Spiced Pumpkin/apple pie smoothie
I have this amazing pumpkin/apple pie smoothie recipe for you this morning!
It's the perfect fall morning breakfast, you're going to love it!
( and if you don't like pumpkins just leave that out of the recipe and you'll get the perfect apple pie smoothie :) )
Ingredients :
* 1/2 apple
* 4 tbsp pumpkin puree ( I roasted a pumpkin and that's what I used in my smoothie )
* 1/2 frozen banana
* 1 cup coconut milk
* 1 cup ice
* 1 teaspoon cinnamon
* 1/2 teaspoon vanilla extract
* pinch nutmeg
* chia seeds, bee pollen
Combine all ingredients in a large blender, blend until smooth and creamy.
Enjoy your amazing fall breakfast/afternoon treat.

Banana bread
Good morning Friends!
I hope you all had a fabulous weekend. Ours was pretty busy so I am typing this
pretty late :), but I wanted you to have this amazing recipe.
Here is my second deliciousness for fall. I found this one on Pinterest too, and I had
to give it a go.
Banana bread recipe
( with coconut flour + no sugar)
So this was my very first banana bread and it turned out very good. I would
say though it's a little bit thick, so I tried to eat it with some juicy figs or
just grab a handful of berries and heat them up on your stove, add a little bit of
water, maybe some cinnamon and ta-da, you got the most amazing topping for your
healthy banana bread.

Baked apples for breakfast
Good morning Friends!
I have an amazing breakfast/snack/dessert recipe for you!
Since fall is here, I started Pinteresting some great healthy recipes for us.
Here is the first one I tried:
Baked apples
I baked mine in the oven, at least for 20 minutes on 350F. Watch your granola,
don't let it get burnt. I used dark chocolate granola in one of my apples,
that's whey it's so dark :) Enjoy!
